機能性食材研究の第5回は、ニンニクを取り上げる。ネギ属の多年草であるニンニクは、鱗茎などが香辛料や食材として利用されている。ピラミッドの建設でニンニクが利用されていたことが記録されており、紀元前3000年頃には古代エジプトなどで栽培・利用されていたと考えられている。原産地は西アジア-地中海沿岸と推定され、日本へは中国を経て8世紀頃には伝わった。
