カルピス発酵応用研究所は、中部大学応用生物学部の横越英彦教授と共同で、乳酸菌Lactbacillus helveticusを用いて製造する発酵乳の中から記憶力向上機能を発揮するペプチドを見いだした。L.helveticusはチーズなどの発酵に用いられるたんぱく質分解能が高い乳酸菌。カルピスの素となる発酵乳「カルピス酸乳」の製造に利用されている。この研究成果は、2012年10月23日から26日に神戸市で開かれた第64回日本生物工学会大会で発表した。カルピスは学会会期中の25日に都内で記者説明会を開催し、同研究所の宮崎博所長とアシスタントマネージャーの大澤一仁研究員が発表した。
